Hi is they a way to append to a exisiting log fille or and pause and resume logs without creating new log files?

I think the only option is to use the defogger button to stop the log whenever you want. so you can know the marked area in the end of the log
other feature is not yet available.

Each time the Start/Stop logging (or defrost) button is pressed a new file is created.
The logs are just text files so you can manipulate them anyway you wish in a text editor or in your favourite spreadsheet program.
