How do I determine which of the software versions (example MS430056) I'm running in order to use the proper bin definitions.

in full read check address 0x6ffba in some binary editor. And in partial address 0x42. For example XVI32 is good binary editor.

Hexa noobi here,
I tried to find the software version of this ecu to be able to open it in tuner pro as RR isn't defined.

I don't understand a thing in this hexadecimal world :oops:

the blue cell is the one 6ffba I believe, how am I supposed to to read soft version in there?

Its written there ... have a look at your picture:
MS4300x66 => Version is 66.

but can you explain me how you read this?

Its stated here HEX 34 <> 52 decimal. Why ver 66?

Like mostly ... HEX => ASCII, sometimes you have to think about bigendian, littleendian ...
But MS41,MS42,MS43 are comfortable. HEX => ASCII and you done.
34 = 4
33 = 3
30 = 0
30 = 0
36 = 6
36 = 6

=> 4 3 0 0 6 6 => 430066 => last two digits => 66

Wow ok, now it makes sense. So the table on the right is the ascii translation and I can read directly 430066.

I thought the SW version was contained in the one bit 6ffba.

Right. But only in your specific configuration right side is ascii you also can show other formats there.
In my opinion best is some people at the beginning have a look for formats like, BIN, Oktal, DEC, HEX, Ascii and transformation between.
Also they should have a look in Hex-Editor to learn a bit about, RR is nice but so much comfortable.
