noob question, but, where are you getting your AFR data from? I dont see that selection in ecuExplorer

Useful AFR data can only be taken from an add-on wideband sensor. The LC-1 from Innovate motorsports is one example. Also, the Logworks program from Innovate will now log ecu data through the Tactrix cable to go along with their AFR data.
For details on how I log the LC-1 through ecuexplorer, see this thread. Didn't really have another option at the time...

I tried the spreadsheet with OpenOffice and it opens up fine but the import CSV button doesn't seem to work. Is there any wya to import with out using that button?

I would bet it won't work with Open Office. I've tried using the sheet with the Mac version of office (on older version though) and none of the macros worked.
You can try a copy-paste from the csv directly into the workbook. That's how I usually do it (on a PC).

Does Open Office even support Visual Basic macros (which is what MS Excel is using)?

upon investigation, it looks like VBA only works on Novell versions
but they have a windows version  So I guess I'll go download that and see if that works

When the ecu is "happy", the two lines should overlay. The offset that is in the above graphs could be from the Knock Learning table, which takes time to populate after a re-flash/reset.

Sorry to ask such a noob question (I haven't used this xl file yet btw). This spreadsheet is for comparing logged data values against ROM map values? - How does the spreadsheet obtain the data values from the ROM - do they need to be copied and pasted into excel?

Yes, copy and paste the tables over, keeping in mind that when pasting into Excel, the row header is offset to the left.
There are some instructions on the first page of the spreadsheet
